March 17 is approaching quickly and visions of shamrocks, leprechauns and green beer begin to dance through the heads of those anticipating the annual celebration of St. Patrick’s Day. What better way to celebrate the day of the patron saint of Ireland than to feast on a traditional dish enjoyed by generations of Irish and Irish wannabe’s.
Bangers are a traditional Irish sausage that is a combination of pork, spices and rusk (bread crumbs). This sausage is steamed, rather smoked sausage, and is served in a number of ways. Our favorite here at NMP is with mashed potatoes and onion gravy to create Bangers and Mash.
Traditional Bangers & Mash
5 large chef potatoes, cooked, peeled and mashed 1 cup CABOT® butter 1 small bunch of fresh chives 2 large Spanish onions, chopped 2 granny smith apples chopped 1 tablespoon Native Maine® brand granulated garlic 6 NORTH COUNTRY Irish Banger sausages 1 bottle Irish Style Stout (We prefer Gritty’s Stout) Sea salt & pepper to taste
Directions: 1. In ½ cup butter sauté the chopped apples and 1 of the chopped onions for 5-8 minutes or until tender. 2. Add the entire sautéed mixture and garlic seasoning to the mashed potatoes. Set aside. 3. In large pot, simmer sausage in stout until warmed through. 4. Sauté the other chopped onion in butter. Brown sausage and onions. 5. To serve, top potatoes with sausage, onions and fresh chives or herbs of choice.
